My very first Blog!

For me blogging about the food I grew up with was always just a matter of time.

 

I grew up in a world full of Punjabi Cooking, my earliest memories are sitting at the kitchen table licking lamb masala off my fingers, the air filled with the nutty smells of freshly cooked chapathi. There were years filled with time spent in the kitchen with my mum learning just how much spice was needed, how to balance the fragrant, the robust and the hot. Throughout my adult life my love for all kinds of food and cooking developed, yet I always returned to my roots - tasty, fresh home-style Punjabi cooking. In 2006 I finally took the plunge and opened the Scotia Spice Cookery School. Based in my own kitchen,  teaching the dishes I grew up with and still love so much today, it’s been a privilege to pass those skills on to my enthusiastic pupils.

 

A couple of years ago a chance conversation led to the development of my curry kits, and a new chapter for Scotia Spice and me. My good friend Pauline became my business partner and we packed the kits with my recipes, delicious spices and lots of tips and techniques from the cookery school allowing my food to reach many more folk.

 

There is such a lot to blog about. From memories of the food I grew up with and the rich tradition it’s come from to how I’ve adapted it over the years, the aromas, taste and how to use classic Punjabi Spices. How to take the freshest of ingredients and make delicious, healthy and simple family food, I hope to touch on all these subjects and many more, I also hope to share the thoughts of the talented food bloggers it’s been my pleasure to meet over the years and who’ve so kindly written abut what I do.

 

I’ve always wanted to pass on my knowledge and experience of the authentic food I grew up with and love so much and hope that this blog opens up another avenue for me to spread the word……….

 

In the meantime a simple recipe from my childhood:

 

Lunchtime Raita

 

Serves 1

 

Punjabi food is as much about the simple peasant dishes that take next to no time to put together as it is about the curries. This was one that my mum would make for a quick and easy lunch when we hadn’t been to the shops that day. For me it’s evocative of lazy school holidays and hours spent with my comics and colouring books! It’s soft, crunchy, sour, spicy and fresh………

 

200g potatoes, Desiree or Maris Piper work well

200g natural yoghurt

A good handful of crunchy lettuce such as Cos or Romaine

Chilli powder

Salt

 

Peel and chop the potatoes into cubes then boil in salted water until tender to the point of a sharp knife. Drain and allow to cool. Combine the potatoes, yoghurt and lettuce and add salt and chilli to taste.

 

I like this with enough chilli powder to make my tongue tingle maybe a quarter tohalf a teaspoon depending on strength but make it to you’re your own taste. I also like to finish this dish by wiping  up the last bits of spicy yoghurt with a chunk of soft white bread!
